Chicken Calderita is a type of Filipino chicken stew. This version involves cooking the chicken in a tomato-based sauce. To make the sauce more flavorful I also add a good amount of liver spread. This ingredient makes this dish truly unique.
How To Cook Chicken Caldereta

Since this is a tomato-based stew, I am also adding tomato sauce at this location. Canned diced tomatoes or tomato puree may also be used. Add water and allow to boil.
I am using a piece of light chicken cubes to make sure that the chicken in my stove has a solid taste. Add the cube and stir the mixer. I also add some Thai chili peppers for this extra kick. Cover the pan and cook for 15 minutes. Use low to medium heat in this location.
We want the chicken to be cooked evenly. For this reason, I flip the chicken pieces so that the top is cooked with sauce. It helps in extracting the flavors from the chicken. Don’t forget to include liver spread. This ingredient improves the taste of the dish. It also gives the dish its own identity, which distinguishes it from other tomato-based stews, such as chicken africa. Cover the pan and allow it to cook for 20 minutes.
Then add the bell peppers, cheese, carrots and potatoes. Cook for 5 to 7 minutes before baking with salt and pepper. Enjoy your dish with warm white rice.
